Ingredients

  • 160 g whole wheat pasta
  • 1 cup tomato sauce
  • 1 handful fresh spinach
  • 5–6 mushrooms
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 2 tbsp grated parmesan
  • Salt, pepper, basil

Instructions

  1. Cook pasta in salted boiling water until al dente; drain.
  2. Heat olive oil in a pan; sauté garlic.
  3. Add sliced mushrooms; sauté 3 minutes.
  4. Add spinach; wilt 1 minute.
  5. Add tomato sauce; cook 3 minutes.
  6. Add drained pasta to sauce and toss.
  7. Season with salt, pepper and basil.
  8. Top with parmesan; serve hot.
💡 TipReserve 2–3 tbsp pasta water for the sauce — it improves texture and flavor. Whole wheat pasta has twice the fiber of regular pasta.
