Instructions
- Cut all vegetables into similar-sized cubes or slices.
- Heat olive oil in a wide pan; sauté garlic.
- Add eggplant and zucchini; sauté 4–5 minutes.
- Add peppers and mushrooms; cook 3 more minutes.
- Add diced tomatoes.
- Add salt, pepper, thyme and chili flakes; stir.
- Cook over medium heat 5–6 minutes until tender and slightly reduced.
