  • 1 medium zucchini
  • 1 medium eggplant
  • 1 red pepper
  • 1 green pepper
  • 5–6 mushrooms
  • 2 tomatoes
  • 3 cloves garlic
  • 2 tbsp olive oil
  • Salt, pepper, thyme, chili flakes

Instructions

  1. Cut all vegetables into similar-sized cubes or slices.
  2. Heat olive oil in a wide pan; sauté garlic.
  3. Add eggplant and zucchini; sauté 4–5 minutes.
  4. Add peppers and mushrooms; cook 3 more minutes.
  5. Add diced tomatoes.
  6. Add salt, pepper, thyme and chili flakes; stir.
  7. Cook over medium heat 5–6 minutes until tender and slightly reduced.
  8. Serve hot or at room temperature.
